What you will need:
-For the dough:
*5 cups of flour
*2 tsp. salt
*2 tsp. sugar
*3 packets yeast
*2 c. hot water
*4 tbsp. extra virgin olive oil
-For the topping:
*3-4 fresh small plum tomatoes (Squeeze them out to release the juice
and then pull them apart into smaller pieces)
*1 large yellow onion
*1/2 pound raw Italian (high quality mild) sausage with the casing removed,
pulled apart into walnut size pieces
*1/2 can flat anchovies (Optional, but very good)
*2 tablespoons Parmesan cheese
*1/4 pound Mozzarella cheese pulled apart into almond size pieces
*A few pinches of salt, fresh oregano and basil to taste
First, put 5 cups of flour into a large mixing bowl and add the salt, sugar, and yeast and mix thouroughly. Next, get 2 cups of water just hot enough so you can put your finger in without burning it. Pour the water into the flour bowl and stir until all the flour is wet. If the mixture does not begin to pull away from the sides of the bowl, add just a bit more flour until it does. Now add the olive oil and keep stirring. Keep adding flour until the mixture is just dry enough to work with your hands. (Humidity will play a factor here.) The dough should be dry enough to knead it without having to pull it off your hands, but not so dry that your hands are clean when you're done.
Now wipe the inside of a medium size wooden bowl with olive oil, put the dough in the bowl, then turn the bowl upside down (now there's oil on the top of the dough). Put a cloth over the bowl and let it rise for 1 hour. When the hour is up, punch the dough in the middle to knock it down, and take it out of the bowl and knead it - maybe ten times, no more. Now let it rest for another 10 minutes, again with the cloth on it.
Now, put some olive oil on a round, thin pizza pan. Useing a rolling pin, start rolling the dough out, and then finish by shaping it into the pan by hand. Put the cloth back over the dough again and let it rise again for an additional 1 hour.
When the hour is up, take the cloth off and brush a little of the olive oil over the top of the dough. You may now put the toppings on, giving them a little "push" to keep them on the dough. Put the Parmesan and Mozzarella on last.
You may now put the bread into an oven preheated to 450 degrees and bake it for about 18 minutes. Once done, let the bread cool on a rack. If you let it cool in the pan or on a flat surface the bottom will end up like dry and tough.
